Two fruit sources, both are about 550-metres in elevation. Hand-picked and whole-bunch pressed and settled before wild-fermenting on full solids in a combination of used demi-muids, neutral barriques and a Byron Bay ceramic egg. Racked and returned, no-malo and extended lees ageing for 15-months in eggs. Released after 24-months in bottle.
Generously flavoured and texturally full with fresh underlying acidity and a refined conclusion.
Brilliant pale straw colour with a watery hue. Ripe peach and nectarine aromas intermingle with hints of dried honey, biscuity nougat and spice notes. Rich fleshy white peach and pear fruits are delivered with plenty of concentration across the texturally full palate. Notions of dried honey, crème brulée, biscuity nougat characters and spice linger across the back half. Gently creamy in its feel it has fresh underlying acidity and a refined yet generously flavoured conclusion.
Drink over the next 5-6 years.
